Apple simply did NOT want people extracting the SPDIF stream as they thought that someday this would be desired and THEY wanted to gouge us properly. After that you can use any A/D chips you like. The chip you need to build such a D/A until must be purchased from Apple and it is not cheap. Before you buy a serious preamp -make sure it has a good A/D section with oversampling AND will extract Apple’s evil proprietary chip that block the SPDIF digital stream from being used by you. MOST of the preamps with iPod docks are simply taking the audio signal from the analog side minus the extra few miliwatts of the headphone jack circuit. The headphone output op-amp is pretty good, but it still does not quite make the grade for serious Hi-Fi. It is subtle, but after a while you get used to the sound as it matches CDs perfectly.
